Ingredients:
- 150g Granulated Sugar (¾ cup)
- 125g Unsalted Butter, melted (½ cup + 1 Tbsp, or 9 Tbsp)(slightly cooled)
- 2 large Eggs, lightly beaten
- 80ml Golden syrup (⅓ cup)
- 15 ml Lemon Juice (1 tablespoon)
- 110g Plain Flour (¾ cup + 2 tablespoons)(All-Purpose Flour)
- 1 tsp (4g) Baking Powder
- 1 tsp (6g) Baking Soda (Bi-carb)
- ½ tsp Salt
- 120g Sour Cream (½ cup)(Full-fat recommended)
- 150g Almond/Hazelnut meal (1 ½ cups)
- 250g Ripe Bananas (~1 cup, mashed)
- Optional: 50g Chopped Walnuts (½ cup)
Instructions:
Preheat & Prepare Pan: First, preheat your oven to 175°C for a conventional oven or 160°C for a fan-forced oven. Generously grease and flour a standard loaf tin or a 20x20cm square cake pan. Alternatively, line the pan with baking paper for easy removal. I personally like to use some of the nut meal instead of flour.
Combine Wet Ingredients (Initial Mix): In a large mixing bowl, add the granulated sugar, slightly cooled melted butter, golden syrup, and lightly beaten eggs. Whisk these together or use an electric mixer on a low speed just until everything is combined into a smooth, glossy mixture.
Add Remaining Ingredients: Now, add all the remaining ingredients directly into the same bowl: the vanilla extract, lemon juice, almond meal, plain flour, baking powder, bicarbonate of soda, salt, sour cream, and the mashed bananas.
Mix Lightly (The Important Step!): Using a spatula or wooden spoon, gently fold all the ingredients together. Mix only until you no longer see any dry streaks of flour. Be careful not to overmix; a lumpy batter is a good sign and will result in a more tender bread.
Pour & Bake: Pour the batter into your prepared pan and use the spatula to spread it evenly.
*For a loaf tin, bake for approximately 60 minutes.
*For a 20x20cm square pan, bake for approximately 45 minutes.
The banana bread is done when the top is a deep golden brown and a skewer inserted into the centre comes out clean or with a few moist crumbs attached (but no wet batter).
Cool Completely: Remove the banana bread from the oven and let it cool in the pan on a wire rack for 10-15 minutes. This helps it to set. Then, carefully invert the pan to release the bread and let it cool completely on the wire rack before you slice and serve.
Storage: Store your cooled banana bread in an airtight container at room temperature for up to 3 days. It will last up to a week in the refrigerator, or can be frozen (whole or in slices) for up to 3 months.
