  • 225g full-fat block cream cheese, properly softened at room temperature
  • 115g unsalted butter, properly softened at room temperature
  • 100g granulated sugar
  • 8g fresh lemon zest (from 1-2 medium, unwaxed lemons)
  • 5-10 ml (1-2 tsp) fresh lemon juice (optional, for extra tang)
  • 5 ml (1 tsp) vanilla extract
  • Pinch of salt (approx. ⅛ tsp)
  • 50-100g finely chopped walnuts (optional)

Instructions:

Infuse the Sugar: In a medium bowl, combine the granulated sugar and fresh lemon zest. Use your fingertips to vigorously rub the zest into the sugar for 2-3 minutes. You’ll notice the sugar becoming fragrant and slightly damp as the lemon oils are released. This step is key for maximum flavour!

Beat Cream Cheese & Butter: In a large bowl, place your softened cream cheese and butter. Using an electric mixer on medium speed, beat them together until they are completely smooth and creamy, with no lumps remaining. Scrape down the sides and bottom of the bowl with a spatula to ensure everything is evenly mixed.

Add Lemon Sugar & Beat Well: Add the fragrant lemon-infused sugar to the cream cheese mixture. Beat on medium speed for a full 5-7 minutes. This extended beating time is the most crucial step! It helps the granulated sugar dissolve into the fats and incorporates air, making the frosting exceptionally light and fluffy.

Add Flavourings: Add the vanilla extract and the pinch of salt. Beat for another 30 seconds until just combined.

Taste & Adjust: Give the frosting a taste. If you’d like a sharper citrus tang, beat in 5 ml (1 teaspoon) of fresh lemon juice. You can add more, but do so cautiously, as too much liquid can make the frosting too soft.

Fold in Walnuts (Optional): If you’re using walnuts, add them to the bowl now. Use a spatula to gently fold them in until they are evenly distributed throughout the frosting.

Chill for Firmness (Optional): The frosting is ready to use immediately for a soft, spreadable consistency. For a firmer frosting (ideal for piping sharp swirls), cover the bowl and refrigerate for 30-60 minutes to allow it to thicken.
