  • Good Quality Chocolate: Since white chocolate is the main ingredient, use a good quality block (like Lindt, Cadbury, or Nestle Plaistowe) rather than “compound” chocolate chips. It will melt better and taste much creamier.
  • Sticky Hands: White chocolate ganache gets soft quickly. If it’s sticking to your hands while rolling, dust your palms lightly with icing sugar or keep a damp cloth nearby to wipe your hands frequently.

Variations

  • Alcohol-Free: The Cointreau or Grand Marnier is optional. For an alcohol-free version, simply swap it for a teaspoon of orange juice or omit it entirely.

Ingredients

  • 250g (approx. 1.5 cups) Good-quality white chocolate, finely chopped
  • 80g (1/3 cup) Thickened cream (35% fat)
  • 50g (1/3 cup) Dried cranberries, very finely chopped
  • 30g (1/4 cup) Pistachios, finely chopped
  • 5g (approx. 1 tsp) Finely grated orange zest
  • 5ml (1 tsp) Cointreau or Grand Marnier (optional)
  • 50g (approx. 3/4 cup) Desiccated coconut, for rolling

Instructions

Prep Chocolate

Place the finely chopped white chocolate in a medium heatproof bowl. Ensure the pieces are small and uniform for even melting.

Heat Cream

In a small saucepan, heat the thickened cream over medium heat until it is just simmering around the edges. Do not let it come to a rolling boil.

Melt

Pour the hot cream directly over the white chocolate. Let it sit undisturbed for 5 minutes. This allows the heat to penetrate the chocolate.

Stir Ganache

Gently stir the mixture from the centre outwards until a smooth, glossy ganache forms. Note: If it looks split or oily initially, keep stirring gently; it should come together.

Add Flavours

Stir in the finely chopped dried cranberries, chopped pistachios, orange zest, and liqueur (if using). Mix until well combined.

Chill

Cover the bowl and place it in the refrigerator for 2-3 hours, or until the mixture is very firm to the touch.

Setup Rolling Station

Place the desiccated coconut in a shallow bowl.

Shape
