These Chai Latte Truffles are the perfect blend of convenience and gourmet flavour. We start with a clever shortcut—using instant Chai Latte sachets—to infuse the cream with that classic, creamy, spiced tea flavour.
However, sachets can be sweet. To counter this, we use a 50/50 blend of milk chocolate and rich 70% dark chocolate to create a perfectly balanced ganache. To finish, we skip the plain cocoa and roll them in a custom Spiced Cocoa Dust loaded with cinnamon, ginger, and cardamom. This ensures you get a warming hit of aromatic spice the moment the truffle touches your tongue.

Tips for Success
- Why Dark Chocolate? Do not skip the dark chocolate! Instant chai sachets contain sugar and milk powder. If you used only milk chocolate, the truffles would be sickly sweet. The 70% dark chocolate provides the necessary bitterness to balance the recipe.
- Sifting is Key: Make sure you sift your “Spiced Cocoa Dust” ingredients together. Lumps of icing sugar or cocoa don’t look good on a truffle.
- Sachet Variations: Feel free to use different sachet flavours like “Dirty Chai” (coffee added) or “Vanilla Chai” for a different twist.
Variations
- Loose Leaf Chai: If you prefer a “pure” method, you can steep 2 tablespoons of loose-leaf chai tea in the hot cream for 15 minutes, then strain it out (you may need to top up the cream if the tea absorbs too much). In this case, you can use more milk chocolate as there is no added sugar from the tea.
- White Chocolate Chai: For a very sweet, creamy version, use all white chocolate. This mimics a “Chai White Hot Chocolate,” but be warned—it will be very sweet!
Troubleshooting
- My ganache is grainy: This might be undissolved powder from the sachets. Ensure you whisk the sachets into the cream while it is hot, before adding to the chocolate.
- My coating is absorbing: Cocoa powder eventually absorbs moisture from the truffle and turns dark. These look best (fresh and dusty) if rolled within 24 hours of serving/gifting.

Q: Can I use just milk chocolate?
A: I strongly advise against it if using sachets. The result will be extremely sweet. If you must, use a very high-cocoa milk chocolate (40%+).
Q: What spices are in the coating?
A: We use cocoa, icing sugar, cinnamon, ginger, and cardamom. If you can’t find cardamom, you can increase the cinnamon or add a tiny pinch of nutmeg.

Ingredients
For the Chai Ganache:
- 125g (1/2 cup) Thickened cream (35% fat)
- 2 x Chai Latte Sachets (approx. 40g total weight)
- 125g Good-quality milk chocolate, finely chopped

For the Spiced Cocoa Dust:
- 4 tbsp (approx. 30g) Unsweetened cocoa powder
- 2 tbsp (approx. 20g) Icing sugar (confectioners’ sugar)

Instructions
Prep Chocolate
Finely chop both the milk and dark chocolate and place them together in a medium heatproof bowl.
Infuse Cream
In a small saucepan, combine the thickened cream and the contents of the two chai latte sachets. Whisk well to dissolve the powder. Heat over medium heat until the mixture just begins to simmer.
Melt
Pour the hot, spiced cream over the chopped chocolate. Let it sit undisturbed for 5 minutes.
Emulsify
Gently stir the mixture from the centre outwards until a smooth, glossy ganache forms.
Chill
Cover the bowl and refrigerate for at least 2 hours, or until the ganache is firm enough to roll.
Make Coating
While the ganache chills, prepare the coating. Sift the cocoa powder, icing sugar, cinnamon, ginger, and cardamom into a shallow bowl. Whisk to combine evenly.
Roll
Scoop teaspoon-sized portions of the firm ganache and roll them quickly between your palms into smooth balls.
Coat
