- 200g Full-Fat Canned Coconut Milk (ensure you shake the can well before use)
- 100g Water
- ¼ – ½ tsp Salt, to your taste
- Optional: 5g (1 tsp) Caster Sugar, to balance the flavours
- Optional Aromatics: 1 Pandan Leaf (tied in a knot), 1-2 Kaffir Lime Leaves, or 1 small stalk of Lemongrass (bruised)
Instructions
Prepare the Rice: First, place your rice into a fine-mesh sieve. Rinse it under cold running water, using your hand to gently swirl the grains. Continue until you notice the water running mostly clear. This essential step removes excess starch and prevents sticky rice. Drain the rice thoroughly, shaking the sieve to remove as much water as possible.
